Set the manual/pressure cook button to 3 minutes. Sprinkle in the macaroni, ground mustard, salt, paprika and pepper.Pour in the broth and scrape bottom of pot so that nothing is sticking.Add in the garlic and saute for 30 seconds. Add in the shallot and saute for 3 minutes. When display says HOT add in the butter and swirl around to melt. Consider stirring in crispy bacon, sautéed mushrooms, rotisserie chicken, caramelized onions, roasted tomatoes, or cooked broccoli.Add a splash of fresh lemon juice or a splash of Worcestershire sauce.Try sprinkling chopped fresh herbs like thyme, rosemary, or parsley on top.I like using Better than Bouillon vegetable base. If you’d like you can use vegetable broth instead of chicken broth.I like to use cheese shredded off the block instead of pre-shredded cheese which has additives in it and doesn’t melt as well.Try experimenting with a combination of cheeses such as sharp cheddar, Gruyère, Parmesan, or fontina to create a more complex flavor profile.Try serving it alongside some collard greens and biscuits.
